Let's get fat

miso-honey salmon with an avocado-wasabi puree

to the recipe

fats are an important component for our body and are needed to feel at our best. about 60% of our brain is made of fat, and though it is glucose that delivers the brain the fuel it needs to function, it is fat that plays an important role in neurological functions, organ functions, digestion and prevention of diseases.

we all know that there are good fats and bad fats, but how can we recognize the first from the latter? there is a simple rule:  bad fats are mostly solid at room temperature (such as butter, margarine, and beef or pork fat) while good fats tend to be liquid when they’re at room temperature (such as vegetable oil).

in your choice of fats, make sure to choose plant-based, fish (for ecological reasons you should eat fish only once a month) and unrefined sources of fat instead of animal fats, oil or other refined fats.

  • they contain more nutrients
  • they are much easier to digest
  • they are anti-inflammatory
  • they boost your serotonin levels
  • they help you absorbing nutrients
  • they prevent memory loss

here’s my top 10 list of fatty foods you don’t want your brain to miss out:

  • avocado
  • fatty fish (mackerel, salmon, sardines)
  • olive oil
  • eggs
  • nuts
  • tofu
  • seeds
  • soy
  • dark green veggies (like spinach, kale, and Brussels sprouts)
  • beans

my dish today is a miso-honey salmon with an avocado-wasabi puree. enjoy!

ciao!
