Ingredients for 2 people

  • 300 g ground chicken breast
  • 2 limes (juice)
  • 1 Tsp fish sauce
  • 1 tsp palm sugar
  • 1/2 tsp chili flakes
  • 3 cm galangal (thinly chopped)
  • 3 shallots (thinly sliced)
  • 4 spring onions (thinly sliced)
  • coriander
  • mint 
  • 1 red dried chilis
  • 1 Tsp roasted sticky rice powder

throw the white sticky rice into a medium-low heated pan or wok, and toast it, dry without any oil. continually mix it so it doesn’t burn. after about 15 minutes, or when rice turns golden, pound it in a mortar into a coarse powder. 

in a bowl combine ground chicken with lime juice and leave for about 15 minutes to marinate. 

cook chicken with dry red chilis in a pan over medium heat stirring until done. 

transfer cooked chicken into medium mixing bowl and add the remaining ingredients. mix well. taste and season as desired.

serve with fresh vegetables (lettuce, tomatoes, cucumber, green beans) and sticky rice.
