Ingredients for 2 people

  • 400g tiger prawns
  • 4cm fresh ginger
  • 2-3 chilis
  • 1/2 avocado
  • 1 clove garlic
  • 1 spring onion
  • 1 Tsp sesame oil
  • 1/2 organic lemon (juice)
  • 2 Tsp thin soy sauce
  • fresh coriander
  • a pinch of fleur de sel

get a skillet on high heat (no oil needed). in a bowl pour in the lemon juice, the oil, the soy sauce and add the ginger (peeled and sliced), the garlic (peeled and sliced), the spring onion (roughly chopped), the chili. 

at this point your skillet should be ready. pour in all your ingredients without stirring for about 2 minutes. in the meantime dice the avocado a chop the coriander. stir the prawns and let them go for about 2 more minutes (or until liquid has almost dissolved). add avocado and coriander and salt. give it a little stir and serve hot.
